Tambaqui Ribs with Mashed "Mandioquinha" (Arracacha)

Individual Tambaqui Ribs

Makes: 4 servings
Cook time: 30 minutes
Ingredients for Fish
  • 8 portions of Tambaqui ribs
  • 4 Tbs. olive oil
  • 1 grated lemon rind
  • 1 tsp. rock salt - ground
  • ½ tsp. black pepper
  • 1 tsp. fresh thyme
  • 1 tsp. pink peppercorn
Ingredients for Mashed Mandioquinha
  • 1 kg mandioquinha (arracacha) - peeled and sliced
  • 1 potato - peeled and cubed
  • ½ cup coconut milk
  • 1 cup milk
  • 1 Tbs. butter
  • Salt - to taste
Ingredients for Crispy Green Beans
  • 350 g green beans - cut in sticks of 6cm each
  • 2 Tbs. olive oil
  • Salt - to taste
  • 2 Ají dulce peppers - halved
  • 2 Tbs. parsley

    Place all the seasonings for the fish in a bowl and mix. Add fish portions and marinate for 30 minutes.Place mandioquinha (arracacha) and potato in saucepan. Cover with water. Cook until tender to fork. Strain. Pass through a potato ricer. Add butter, coconut milk, and milk. While still hot, beat with wooden spoon until creamy. Season with salt and set aside.Blanch green beans in boiling water for 2 minutes, remove. Place in cold water. Season with salt and olive oil.Grill the rib portions in a skillet using olive oil.


    Place 2 rib portions on a serving plate. Add the mashed mandioquinha (arracacha) and green beans. Garnish with Ají dulce pepper and parsley.
