Nativ´s Tambaqui Loin with Limone Sauce

Tambaqui Loin Steaks

Makes: 4 servings
Cook time: 30 minutes
Ingredients for Fish
  • 4 Tambaqui loin steaks
  • 4 Tbs. olive oil
  • 1 Tbs. lime peel - grated
  • 1 chopped clove of garlic
  • Salt - to taste
  • 1 tsp. red pepper sauce
Ingredients for Cherry Tomatoes
  • 2 cups cherry tomatoes - halved
  • ½ cup olive oil
  • ½ cup balsamic vinegar
  • Salt - to taste
  • 1 garlic clove
Ingredients for English Peas
  • 350 g English peas - briefly cooked
  • 2 Tbs. diced onions
  • 1 Tbs. butter
  • Salt and black pepper - to taste
  • Grated Tahiti lime rind
  • 10 chive leaves

    Place all ingredients for seasoning fish in a bowl. Add fish fillets. Marinate for 10 minutes. Place olive oil, garlic and balsamic vinegar in a frying pan. Boil for 5 minutes. Add tomatoes and season with salt. Remove from heat and set aside. Warm butter and onion in a frying pan. Add peas and sauté. Season with salt and black pepper. Grill fish fillets in a non-stick frying pan for 3 minutes on each side.


    Arrange fillets on serving plate with peas and tomatoes. Garnish with chives and grated lime peel.
