Nativ´s Tambaqui Loin Chef's Choice

Tambaqui Loin Steaks

Makes: 4 servings
Cook time: 30 minutes
Ingredients for Fish
  • 4 Tambaqui loin steaks
  • 3 Tbs. olive oil
  • ½ Ají pepper - seeded and diced
  • 1 tsp. lemon thyme (leaves only)
  • 50 ml olive oil
  • Salt - to taste
  • 4 Tbs. olive oil (to sauté)
  • 1 Ají pepper (to garnish)
Ingredients for Broccoli
  • 1 broccoli head (use only florets)
  • 3 Tbs. olive oil
  • Juice of lime half
  • Salt - to taste
  • 1 garlic clove - sliced thinly
Ingredients for New-Potatoes
  • 400 g new potatoes - with skins, halved, cooked al dente
  • 1 Tbs. butter
  • 1 Tbs. Canola oil
  • 2 garlic cloves - minced
  • Salt - to taste
  • 1 Tbs. Parsley chopped

    Place all ingredients for seasoning the fish in a bowl. Add Tambaqui loins. Marinate for 20 min. Blanch broccoli florets. Sauté in garlic and oil. Remove from heat and season with lime juice.Heat the butter, oil and garlic to high temperature in a skillet. Add potatoes. Fry to brown both sides. Remove from heat and add chopped parsley.Heat oil in a thick-bottomed saucepan, add fish. Cover and fry for 5 minutes. Turn. Fry other side for 5 minutes.Place fish on a serving plate. Spoon 4 broccoli florets and a portion of new-potatoes beside fish. Garnish with Ají pepper.
