Nativ´s Whole Amazonian Pintado à Moda da Terra

Amazonian Pintado Fillet Fish Sticks

Makes: 4 servings
Cook time: 30 minutes
Ingredients for Fish
  • 4 Pintado loin steaks
  • 4 garlic cloves - unpeeled, cooked in water
  • 4 Tbs. olive oil
  • 1 tsp. Rosemary - fresh
  • Salt and black pepper - to taste
Ingredients for Squash
  • 4 slices of winter squash - 1.5 cm thick
  • 1 Tbs. olive oil
  • 1 Tbs. sugar
  • Salt - to taste
Ingredients for Onions
  • 1 onion - made into petals by cutting lengthwise in 8 portions
  • 1 Tbs. butter
  • 1 Tbs. white vinegar
  • 1 Tbs. chives
  • Salt - to taste
  • 1 jalapeno pepper - grilled
  • 1 bundle of chives - tied together at end

    Cook garlic, peel, and pass in press. Blend garlic, salt, rosemary, and olive oil until pasty. Brush paste over each portion of fish. Set aside for 20 minutes.Place water, salt, sugar and squash in saucepan. Cook for 15 minutes. Remove water and brown (while still hot).Cut onion lengthwise in 8 portions. Place butter, vinegar, onions in saucepan. Sauté. Season with salt. Remove from heat and add chives.Grill fish in a non-stick skillet.


    Place fish on serving plate and arrange squash and onion petals beside it. Garnish with jalapeno pepper and chive bundles.
