Crispy Fish with Seasoned Rice and Broccoli

Crispy Fish - Breaded frozen fish

Makes: 4 servings
Cook time: 30 minutes
  • 8 Crispy fish - deep fried or baked at 180°C
Ingredients for Rice
  • 1 Tbs. corn oil
  • 1 Tbs. chopped onion
  • 1 Tbs. diced red pepper
  • 1 tsp. diced Ají dulce pepper
  • 2 cups rice
  • 1 cup coconut milk
  • 3 cups water
  • Salt - to taste
Ingredients for Broccoli
  • 1 broccoli head - cooked (use only florets)
  • 1 Tbs. corn oil
  • 2 chopped cloves of garlic
  • 1 Tbs. olive oil
  • ½ cup water - to cook broccoli
  • Salt - to taste
  • 12 whole Ají dulce peppers

    Sauté corn oil and onion in saucepan for 2 minutes. Add red pepper and Ají pepper and sauté for 2 more minutes.Add rice and sauté. Next add the coconut milk, water and salt. Bring to a boil. Lower heat. Cover and simmer until liquid dries. Set aside.Warm olive oil in a frying pan. Add chopped garlic and broccoli. Fry for 2 to 3 minutes and add water. Cook broccoli with salt until water dries. Remove from heat. Set aside.


    Arrange a portion of rice, broccoli and 2 fish fillets on a serving plate. Garnish with 3 Ají dulce peppers.
